Bourbon & Bubbles is a two-hour luxury culinary and social experience where extraordinary cuisine, handcrafted cocktails, sophisticated surroundings and exceptional hospitality come together for one unforgettable evening.
Only sixty guests are invited to each quarterly experience inside the Eculent Speakeasy at Clear Creek Winery in Kemah. Each evening features an eight-course culinary journey developed by Chef David Skinner, accompanied by thoughtfully created cocktails, Champagne and spirits from his own wine and distilling programs.
The menu remains a secret. The guest list is intentionally limited. And every detail—from what is served to who is seated in the room—is designed to make the evening memorable.
The evening takes place within Clear Creek Winery and the Eculent Speakeasy, surrounded by Chef Skinner’s world of wine, spirits and culinary creativity.
Bourbon & Bubbles showcases bourbon, cocktails and spirits from Chef David Skinner’s own distilling program, thoughtfully incorporated into the evening’s culinary experience.

Tony Bell is the founder of Bell Empire Media & Events and the creator, event producer and curator of Bourbon & Bubbles.
Bell's role is to bring the complete experience together—from the guest list and atmosphere to partnerships, entertainment, hospitality and the details that make an evening memorable.
His background includes producing social experiences in Las Vegas and developing events and community concepts throughout the Bay Area Houston region. His projects include the Bay Area Breakfast Club and Bourbon & Bubbles, along with organizing the Trunk or Treat Shop & Eat event in Kemah (October 2026), the Seabrook Seafood Festival (spring 2027), and the Kemah Wine & Food Festival (fall 2027).
Chef David Skinner is the culinary force behind Eculent and Ishtia and the winemaker and distiller behind Clear Creek Winery and Meticulous Spirits.
His approach brings together culinary artistry, science, storytelling, cocktails, wine and spirits to create dining experiences that extend far beyond a traditional restaurant.
Skinner was recognized as a 2025 James Beard Award semifinalist for Best Chef: Texas for Ishtia. At Bourbon & Bubbles, Chef Skinner leads the eight-course culinary journey, cocktail and spirits program, pairings and culinary presentation.

No. Bourbon & Bubbles is limited to sixty guests per evening and attendance is strictly by invitation or waitlist selection.
Interested guests may join the waitlist. Invitations are personally curated by creator and event producer Tony Bell. Joining the waitlist does not guarantee an invitation.
The experience is designed around thirty couples and sixty total guests for an intimate room dynamic.

The culinary tasting and social experience lasts approximately two hours.
That's part of the experience. Chef David Skinner creates an eight-course tasting menu for each evening, and the menu remains undisclosed prior to arrival.
Dietary restrictions and food allergies should be submitted during private guest registration. Accommodations are subject to the culinary team's ability to safely modify dishes.
Dress to Impress. Upscale cocktail, formal or gala-inspired attire is expected and the dress standard is strictly enforced.
Yes. All guests must be 21 or older and present valid government-issued photo identification upon entry.
Invited guests receive access to a private registration portal where their reservation is completed securely through Stripe.
No. The existing Eculent / Ishtia Speakeasy Membership ($85/mo) is a separate restaurant program. A dedicated Bourbon & Bubbles Society membership is currently being developed.
Capacity is strictly capped at sixty guests (thirty couples) per evening. Attendance is curated by invitation.
